5. Berry coulis
Make an easy berry sauce to serve with cakes, puddings or other desserts. Sprinkle frozen berries with a little castor sugar and let them defrost. Purée with a blender or food processor. If you like a smooth sauce, pass through a sieve to remove any seeds. Raspberry coulis is delicious with lemon cake.

9. Berry meringue ice cream
Soften a pack of reduced-fat vanilla ice cream. Add frozen mixed berries and blend using a mixer. The ice cream should turn a lovely pink colour. Add more berries and crumbled meringue pieces. Mix gently so meringue doesn’t break. Re-freeze until firm.
10. Berry and banana cake
Add blueberries, boysenberries or raspberries to banana cake. Fold gently into mixture just before pouring the cake mixture into the tin, so the berries don’t break up too much.
