Instructions and steps: 

Step 1 Preheat the oven to 180°C.

Step 2 Mix the flour, crushed Weet-Bix, Light ‘n’ Tasty, sultanas, spices and baking powder together in a bowl.

Step 3 In a separate bowl, mix the milk, apple juice, mashed banana, beaten egg and yoghurt.

Step 4 Combine the wet and dry ingredients together until they are just mixed and no more. Place in greased muffin tins and bake for approximately 15 minutes.

Karey says: "These muffins are really filling, can be frozen and are perfect for kids' lunch boxes or for a great sustaining snack at the office. Feel free to substitute the fruit for other seasonal options. I have used raspberries instead of the banana and they take on a whole new life! I find yoghurt gives them a nice texture while the Weet-Bix adds a really nice malty flavour."
