Instructions and steps:
Step 1 Place soy sauce, water, mirin and sugar in a small pan. Stir over a low heat until sugar dissolves. Bring to the boil, then reduce heat and simmer uncovered for 3 minutes.
Step 2 Heat oil in a non-stick pan. Add chicken in batches. Cook over a high heat until evenly browned.
Step 3 Return chicken to pan and add sauce. Cover and cook for 20-25 minutes, or until chicken is tender. Stir in coriander. Serve with rice.
