
Honey and soy chicken with cashews

Instructions and steps:
Step 1 Steam carrots or cook in a large pot of boiling water until tender. Drain and set aside.
Step 2 Cut chicken in strips. Heat oil in a non-stick frying pan and add chicken to brown.
Step 3 Add honey and soy sauce then stir in carrots. Cook for 2 minutes.
Step 4 Sprinkle with cashews. Serve with rice, lightly-steamed spinach, and garnish with fresh parsley.

This works well as a glaze for either chicken or fish and you can use any veggies.
Average. Needed a bit more to it.
Excellent! This will become a regular.
A bit tastier if you marinade the chicken for a few hours or overnight in the soy and honey (I add some garlic too). Add any leftover marinade after frying the chicken.

I did as Jennybee said and added garlic and marinaded the chicken for a few hours first and it was delicious! Next time I won't stir the carrots in with the honey and soy though as it became a bit sickly sweet so would add carrots when serving rather than in with the sauce. Will definitely make again and my 2 year old even loved it!
