This is my 'go-to' recipe for a quick, healthy, delicious meal literally in 10 minutes. My local Farmers' Market has 190g chunks of hot smoked salmon very reasonably priced so we often have it once a week.

Full ingredient list:
  • 130g packet flavoured couscous
  • 200g piece hot-smoked salmon, flaked
  • 2 cups baby spinach leaves
  • 1 cup cherry tomatoes, halved
  • 1 lemon, juiced and rind finely grated
