Instructions and steps: 

Step 1 Preheat oven to 180ºC. Scoop out zucchini flesh. Set aside.

Step 2 Place a single layer of zucchini 'boats' in a baking paper-lined oven dish. Fill boats with carrot, zucchini flesh and ham. Top with grated cheese.

Step 3 Bake for 30 minutes or until cheese is melted and zucchini is cooked through. Let cool for 5 minutes. Serve with carrot sticks, cherry tomatoes and crusty bread.

Variations

Make it gluten-free: Check your ham is a gluten-free brand; and if you're using pre-grated cheese, check this too.
