Instructions and steps: 

Step 1 Blanch cauliflower in boiling water for 4-5 minutes until tender-crisp. Drain well.

Step 2 Heat oil in a frying pan over a medium-high heat. Add almonds and cook, stirring, for 2 minutes until just brown. Add cauliflower and stir-fry for 2 more minutes. Stir in parsley and currants. Season with pepper.
