LSA sage and parmesan crusty chicken

Instructions
Step 1 Preheat oven to 180°C.
Step 2 To prepare LSA coating, mix sage, parmesan, lemon zest and LSA. Season with salt and pepper.
Step 3 Place rice flour in another bowl and season with salt and pepper.
Step 4 Beat egg with a little cold water. Season and set aside.
Step 5 Lightly dust chicken in seasoned rice flour, being sure to shake clear any extra flour as this may clump and stick to the chicken causing a floury taste after cooking.
Step 6 Coat floured chicken in egg mixture, once again shaking any excess egg mixture clear from the chicken.
Step 7 Coat chicken well in LSA coating, taking time to ensure all chicken is well covered.
Step 8 Heat a large, heavy-based frying pan to a medium heat and drizzle with olive oil.
Step 9 Cook chicken pieces 2 at a time in the pan until lightly golden brown on both sides. Remove from pan and repeat process until all chicken has been browned.
Step 10 Cover 4 pieces of chicken with buffalo mozzarella rounds and 3 x 1\2 slices prosciutto each. Place another piece of chicken on top to form a chicken 'sandwich'.
Step 11 Return to pan, or place in a pre-heated oven dish. Add a good dollop of unsalted butter (around 10-15g) to top of each chicken sandwich.
Step 12 Cook in oven for about 10-12 minutes, or until chicken is completely cooked.
Step 13 Remove from oven, then baste chicken with the butter in the base of the pan/dish – this is where a lot of the flavour is.
Step 14 Allow to rest for 10 minutes in a warm place. Cut each chicken sandwich in half on an angle. Serve with rocket and parmesan salad, drizzled with your favourite olive oil and balsamic syrup.
