Step 1 In a bowl mix dried fruit, cereal, sugar and the first measure of milk. Mix well and set aside for 30 minutes.
Step 2 Preheat oven to 170°C. Spray a loaf tin with cooking spray. Sift dry ingredients and mix into bran mixture, gradually adding the second measure of milk until combined.
Step 3 Pour into prepared tin and bake in oven for 40-45 minutes until risen well. Remove and cool on a wire rack. Store for up to 1 week or freeze in slices.
