Basil penne bake

- 350g penne pasta
- 3 cups broccoli florets
- 2 red onions, peeled, thinly sliced
- 2 teaspoons Tuscan seasoning
- 70g fresh spinach, roughly torn
- 400g can chopped tomatoes with basil

1 Preheat oven to 180°C. Cook pasta following packet directions, and add broccoli to pasta for the last 3 minutes of pasta cooking time. Drain and set aside.
2 Spray a non-stick pan with oil. Add onions. Cook, stirring, until lightly browned. Mix in seasoning and add spinach. Cook until spinach just wilts. Remove from heat and add tomatoes.
3 Combine mixture with pasta. Transfer to an ovenproof dish. Bake for 15-20 minutes until heated through.
4 Divide among bowls. To serve, top with 3 tablespoons of grated parmesan cheese (optional), and fresh basil.
