Cauliflower with currants and almonds

- 1 head cauliflower, trimmed, cut in small florets
- 2 teaspoons olive oil
- 1/2 cup flaked almonds
- 1/2 cup chopped flat-leaf parsley
- 4 tablespoons currants

Instructions
1 Blanch cauliflower in boiling water for 4-5 minutes until tender-crisp. Drain well.
2 Heat oil in a frying pan over a medium-high heat. Add almonds and cook, stirring, for 2 minutes until just brown. Add cauliflower and stir-fry for 2 more minutes. Stir in parsley and currants. Season with pepper.
