What we did

  • A traditional ginger crunch is made with a rich shortbread base of butter, sugar and desiccated coconut, often with oats too. The ginger topping is traditionally made with butter, icing sugar and golden syrup.
  • Our makeover base uses a combination of nuts, bumping up protein and fibre, and is sweetened with dates and maple syrup, providing plenty of sweetness without so much sugar. The butter is replaced with almond butter.
  • Our topping swaps out the butter and slashes the icing sugar.
  • Taking the butter out hugely reduces the saturated fat and, overall, we’ve cut back our sugars, but still leaving it a satisfyingly sweet, gingery treat.

For both base and icing, the amount of ginger you use depends on personal taste.
