Crispy low-fat roast potatoes
medium-sized potatoes (1 per serve*)
herb seasoning (we used Masterfoods Tuscan seasoning)
olive oil spray

- Preheat oven to 190°C.
- Peel then cut each potato into approximately 2-3 pieces. Place in a saucepan and cover with cold water. Bring to the boil and simmer for 10 minutes. Drain thoroughly. Toss in a little herb seasoning to cover evenly.
- Place potatoes in an ovenproof dish (large enough for them to be turned), spray with olive oil and toss to coat. Roast in oven for 1 hour 20 minutes to 1 1/2 hours until evenly golden brown, turning a few times during cooking.
