- 1 cup small button mushrooms
- 2 cups water
- 1/4 cup lemon juice
- 1/2 teaspoon salt
- white wine vinegar, to marinate

1 Trim mushroom stalks and brush to clean. In a small pan, heat water, lemon juice and salt to a simmer. Add mushrooms and cook for about 3 minutes.
2 Drain mushrooms and allow to cool. Place in a bowl and cover with vinegar. Marinate for 3-4 hours, then drain. Use, or preserve in oil.
