Lemon and cashew rice
- 1 tablespoon canola oil
- 2 teaspoons yellow mustard seeds
- 3 tablespoons unsalted cashew nut pieces
- 1/2 teaspoon turmeric
- 2 cups cooked basmati rice
- 1/2cm-piece fresh ginger, grated
- 1/2 lemon, juice
- pinch salt

Dietary fibre 1g
1 Heat oil in a large frying pan. Add mustard seeds and heat until popped.
2 Add the remaining ingredients. Stir well. Cook for a few minutes until heated then serve.
Serve as part of this budget Indian dinner party for four… three courses for under $4.50 per person!
