Beans and peas in ginger dressing
- 250g baby carrots, trimmed
- 250g green beans
- 150g snow peas
- 100g baby rocket
- 8cm piece fresh ginger, grated
- 2 cloves garlic, finely chopped
- 1/2 cup orange juice

1 Place carrots in a saucepan and cover with lightly salted water. Cook until tender. Add beans and peas and cook for 3 more minutes until tender-crisp.
2 Drain vegetables, cut carrots in half lengthways and lightly toss with rocket. Transfer to a warmed platter. Mix dressing ingredients together and drizzle over vegetables.
3 Serve sprinkled with freshly ground black pepper.
