- 125g reduced-fat spread
- 1/2 cup soft brown sugar
- 1 1/4 cups wholemeal flour
- 1/2 cup plain flour
- 1 teaspoon baking powder
- 1 teaspoon ground ginger
- 1/2 cup apple purée
- 1/2 cup rolled oats
- 1 tablespoon reduced-fat spread
- 3/4 cup icing sugar
- 2 teaspoons ground ginger
- 1 tablespoon liquid honey
- 1 teaspoon water
- 1/4 cup crystallised ginger, chopped

1 Preheat oven to 180°C. Lightly spray a baking tray with oil.
2 In a large bowl combine spread and sugar and beat until creamy. Add the remaining ingredients and beat well. The mixture will be sticky. Spoon into prepared baking tray.
3 Bake for 30-35 minutes until a skewer inserted comes out clean.
4 To make topping, place ingredients in a pan and heat until combined. Allow mixture to bubble and quickly pour over slice base while slice is still hot.
5 Sprinkle with crystallised ginger and cut in squares while still warm. Leave to cool in tray then place in fridge for 1-2 hours to set.
This slice keeps for up to 5 days in an airtight container.
