Honeydew and lime granita

- 2 tablespoons lime juice
- 1/2 cup apple juice
- 1/3 cup castor sugar
- 450g honeydew melon, peeled, deseeded, chopped

1 Pour fruit juices and sugar into a small saucepan. Cook, stirring, over a low heat until sugar dissolves. Set aside to cool.
2 Place melon in a food processor and blend until smooth. Add juice mixture and pulse to combine.
3 Pour mixture into a shallow metal baking pan and freeze for 1 hour or until the edges start to become icy. Use a fork to stir the icy edges into the centre of pan. Repeat this step every 30 minutes or until granita is completely frozen.
4 To serve, scrape granita with a fork to form icy crystals then place in small serving dishes. Serve immediately.
