Vanilla poached apricots

5 tablespoons soft brown sugar
1 vanilla bean, split in half
juice of 1 lime
8 firm apricots
4-6 tablespoons low-fat Greek yoghurt, to serve

- In a saucepan place 1 3/4 cups water and sugar and heat until sugar dissolves. Bring to a simmer. Add vanilla bean, lime juice and apricots. Cook for 5-6 minutes, turning several times to poach evenly.
- Remove apricots from syrup and set to one side. Bring syrup to a rapid boil and heat for 2 minutes until liquid is reduced by a quarter. Pour syrup over apricots. Chill.
- Before serving, remove vanilla bean. Serve two apricots each with yoghurt.
If you prefer apricots to remain firm, reduce poaching time by a couple of minutes.

These apricots will keep well in the fridge for a couple of days.
